This wine is bright straw yellow coloured, with lively bubbles, and a soft, caressing flavour. It is an excellent aperitif, and is also suitable for vegetable soups and shellfish dishes, pasta with delicate meat sauces, fresh cheese and white meat.
Suggested serving temperature: 8 ºC.
VALDOBBIADENE PROSECCO SUPERIORE DOCG EXTRA DRY
Production area: Valdobbiadene, Vittorio Veneto
Soil: Calcareous clay
Variety: Glera (a.k.a. Prosecco)100%
Harvest: hand-picked, with selection of the grapes.
Winemaking: soft-pressing by membrane pumps, static decantation of must, temperature-controlled fermentation (18°) on selected leavenings. Ageing on fine lees in steel vats for approx. three months.
Bottle refermentation: italian method at temperature controlled refermentation (14°-15°), with selected leavenings. Cold tartaric stabilization (-4°) and microfiltration of the yeasts before isobaric bottling. The whole process takes 60 days.
In the glass: colour is bright straw yellow with greenish hues, foam is thick and persistent, fine perlage.
Aroma: wide, fine and intense, where the leading notes are Kaiser pear and golden apple, followed by apricot, orange flowers and tarragon echoes, on a minerality background.
Palate: soft, intense and enfolding. Flavour is bold and persistent, while wrapping the whole palate in a pleasant balance with the final minerality.
Food combinations: this is a wine for every occasion. Perfect with salames and cold cuts or pasta main courses, excellent with marinated seafood or a grilled fish.
