The vineyard is located in Alonte (VI), at the heart of the classic Berici hills D.O.C. area.
After de-stemming, grapes are cold macerated at 5° for 12 in inert air; then follows soft pressing, and low-temperature static sedimentation: the selected yeasts are added to a clear must.
Casara Roveri Sauvignon is beautifully combined to first courses, as well as to shellfish.
Some local dishes:
- wild mushrooms and herbs Risotto
- baked trout fillets with potatoes
- Bassano white asparagus
Best served at a temperature of 10°-12°C.; open the bottle few minutes before serving.
