This pae coloured Prosecco is characterized by the pleasant feeling at the palate, its slightly fruity aroma, the delicate and lively flavour, mildly sweet. It is perfectly ready to be enjoyed at any time of the day.
Production area:Valdobbiadene, Conegliano, Vittorio Veneto Soil: Calcareous.
Grape: Glera (a.k.a. Prosecco) 100%
Harvest: hand picking, with selection of the grapes.
Winemaking: sof-pressing, by hidraulic membrane pumps. Static decantation and temperature-controlled fermentation (18° with selected yeastss). Ageing on fine leavenings (fine lees) for approx. two months.
Bottle refermentation: italian method at controlled refermentation temperature (14°-15°) with selected leavenings. Cold tartaric stabilization (4°) and yeasts microfiltration before bottling. Production time is approx. 45 days.
In the glass: bright straw yellow, persistent foam.
Aroma: fruity, with golden apple and Kaiser pear notes appearing first, on a pleasant citrus background.
Flavour: slightly sweet, fresh and fruity. Good balance and persistence.
Food combinations: a wine to be enjoyed with friends, ideal as an aperitif, it is well combined with cold cuts or classic pasta & tomato sauce.
Specifications: alcohol content 11,0% vol., residual sugars 16 g/l, acidity 6,5 g/l., PH 3,20 press. 6 atm
